Join us a celebration of Victoria’s Culinary and Cultural Diversity as we explore the deep connection between food, wine, and place. Led by Chef Hayden Ellis, our kitchen team—representing Australia, England, New Zealand, Japan, South Korea, and India—has crafted a menu that celebrates Victoria’s rich multicultural influences. Each dish highlights a signature Victorian ingredient, paired with global techniques and traditions, creating a menu that is both innovative and deeply rooted in place. To complement the experience, our expert sommeliers have collaborated with top Victorian winemakers to curate pairings that reflect the diverse terroirs of our region, ensuring that each dish and wine harmonise beautifully.
